Maine-Style Cheesy Baked Chicken & Potatoes
Simple ingredients, big comfort. Tender chicken layered with golden potatoes and sweet onions, baked until bubbly and covered in melty cheese with crispy bacon on top. This is the kind of cozy, back-to-basics meal that fills the kitchen with warmth and brings everyone straight to the table.
Ingredients
- 3–4 boneless, skinless chicken breasts
- 4 medium potatoes, thinly sliced
- 1 large onion, thinly sliced
- 1½ cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 2 tbsp olive oil or melted butter
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Layer the base:
Spread sliced potatoes evenly in the dish. Drizzle with olive oil or butter. Season with salt, pepper, garlic powder, and paprika. Add sliced onions over the potatoes. - Add the chicken:
Place chicken breasts on top. Season both sides lightly with salt, pepper, and a pinch of paprika. - Bake covered with foil for 35–40 minutes, until chicken is nearly cooked through and potatoes are tender.
- Add the cheese & bacon:
Remove foil. Sprinkle mozzarella and cheddar generously over the chicken and potatoes. Top with crumbled bacon. - Bake uncovered for another 10–15 minutes, until cheese is melted, bubbly, and lightly golden.
- Rest & serve:
Let rest 5 minutes before serving. Garnish with fresh parsley and spoon the cheesy sauce from the bottom over each portion.
